Located on Granary Square in the heart of King’s Cross, The Lighterman is a landmark venue within the Open House group, spread across three floors with a riverside bar, dining room, and terrace spaces. Our kitchens deliver quality and consistency across busy lunch, dinner, and weekend services, as well as events, serving modern British classics complemented by our signature desserts.
We’re looking for a Pastry Sous Chef to take a leading role within our pastry operation; Someone who combines creativity with precision, loves developing new ideas, and understands the balance between craft and commercial success.
What you’ll do
- Lead and inspire the pastry team, ensuring consistency, quality, and attention to detail across every dish.
- Contribute to menu development and innovation, bringing creative flair while managing cost and yield effectively.
- Oversee the pastry section during service, ensuring every plate is made and finished to order with precision and care.
- Collaborate closely with the Head Chef and senior kitchen team to drive efficiency, training, and development.
- Uphold excellent hygiene, food safety, and health & safety practices.
What we’re looking for
- Proven experience in a senior pastry position within a high-volume, quality-led kitchen.
- Strong technical ability and a genuine passion for flavour, texture, and presentation.
- Creative mindset with an understanding of how to balance design and delivery with cost control.
- Leadership skills: the ability to motivate, train, and support junior chefs.
- Excellent organisational and communication skills under pressure.
